Fantastic Pikelets

This is a foolproof recipe that is well and truly working its way into our family favourites. A great Sunday morning treat.

 

You need:

I cup self-raising flour

Pinch of salt

2 tablespoons of sugar

1 egg

1 teaspoon bicarbonate of soda

2/3 cup of sour milk (add one teaspoon vinegar to normal milk and microwave for 20 seconds)

or

2/3 cup of milk and 1 teaspoon of lemon juice

 

Sift flour and bicarbonate soda. Add remaining ingredients and mix very well. This recipe works better if you let the mixture sit for a while before cooking. Cook pikelets in a frying pan or on a barbeque by pouring small amounts of the mixture onto the cooking surface and letting it form a flat pancake shape. Turn the pikelets when bubbles appear. Serve immediately with honey, jam, fruit, or whatever takes your fancy. 

For some variations to this you can add extra ingredients for taste. Some of the ones we like are mashed bananas or a couple of tablespoons of Sustagen (chocolate flavoured energy/ vitamin drink powder).
