Healthy Banana Bread 

Use overripe bananas for the best result in this delicious yet energy filled snack. 

You need: 

60g margarine or butter

1/3 cup of brown sugar

½ cup of milk

2 eggs

1 cup of mashed banana

1 cup wholemeal self-raising flour

1 cup white self-raising flour

1 teaspoon bicarbonate of soda

1 teaspoon vanilla

 

Method: 

  1. Cream butter and sugar. Add eggs, banana, vanilla and milk.
  2. Sift together flours and bicarb soda. Add this to the mixture and stir in lightly.
  3. Pour mixture into a greased loaf tin and bake in a moderate oven for about 50mins. Test with a skewer to see if it is cooked through. Turn out while hot.

You can serve your banana bread plain, with butter, or with cream cheese. A good snack for growing children. For a variation you can add 1/3 cup of chopped walnuts to the mixture before baking.
